    Off Color Brewing Squoke

    Squoke_750Foedre Aged Wild Ale | 5.9% ABV

Our very first batches brewed here at Mousetrap, aged in the first fill of one of our 14 yr old Barolo foedres for multiple seasons to eke out every last bit of their essence. Dry, but wonderfully fruited, vinous character is supported by complex wood tannin structure while barnyard earthiness plays off ripe pineapple and nectarine notes from mixed fermentation of Brettanomyces claussenii, mango like farmhouse ale yeast, and acidic wild cultures. Initial blushes are of nectarines, strawberries, and blackberry jam with a deeper base of soil, mahogany, and India ink. These are followed by a quick nip of nectarine like acidity expanding to an expressive meadow of over-ripened peach flesh, angel food cake, and summer harvest honey. The finish is a long, meandering affair of tannin, slate like minerality, pie crusts, and black cherry.

off color brewing miscellanea Vol. 2

    Miscellanea_250ml_Final_Label

Foedre Fermented Wild Ale | 6.2% abv

Modeled more after a super saison with a lighter colored grist bill and a heavier addition of wheat to soften the body and round out the expression. As part of the ever expanding palette of house bretts, native yeasts and wild cultures from Allagash, Central State, Side Project, Jesterking, and ourselves carried over from Vol 1, we’ve added an additional laboratory source of Brettanomyces clausennii and our Hellbroth cultures. Vol 2 retains the over-ripe apricot, bergamot, cotton candy and wisps of Nebbiolo grapes further punctuated by explosive notes of Mandarin orange and tepaché. Alluringly tannic and dry, complemented by moderate acidity, barnyard funk and Old World, Bordeaux Sauvignon Blanc like minerality.

    pumpkin ale | 5.5% ABV

Gourds Gone Wild is a rich, full-bodied taste explosion. Its deep red-amber color comes from malts known for their malty sweetness providing an awesome backbone for our famous pumpkin pie spice combination. The aroma should offer nutmeg, cloves, vanilla and roasted pecans. Gourds flavor profile showcases nutmeg, cloves, allspice, vanilla and that wonderful flaky pie crust. Not bready. Not biscuity. Crusty! There is even a touch of the whipped cream on the back end!

Here’s our take on the classic Märzen Style Lager, for the original festival that celebrates beer – with beer. Our Oktoberfest goes well with sauerkraut, brauts and a pair of lederhosen. It has a rich body, smooth flavor and notes of sweet caramel malt that are like polka music to your mouth.

There’s plenty to celebrate when fall arrives in Colorado. The warm days grow shorter, the cool shadows grow longer, and the aspens put on their golden, grand finale. Brewed with biscuity sweet Munich malts and spicy, herbal noble hops, our Oktoberfest is a reminder to stop and enjoy the show.

    stone brewing notorious p.o.g.

    new-beer-releases

    berliner weisse| 4.7% ABV

We’ve had plenty of fan-favorite beers over the years, but few have garnered the cult-like adoration of this one. Stone Notorious P.O.G. was originally brewed at our 10bbl Liberty Station brewhouse in San Diego, as a collaboration with comedian / actor Jonah Ray. It’s a tribute to the passion fruit, orange and guava juice (aka POG) he grew up drinking in Hawaii. This Berliner Weisse-style ale is loaded with the aforementioned trifecta of fresh, tropical fruits, making for a unique flavor that’s tart and refreshing yet deeply rich and complex. It’s as ridiculously tasty as it is deliciously unique.
