As issues like soil erosion and drought management become more pressing for vintners, thanks to climate change, some are turning back to an old farming method for solutions. Contour farming involves tilling or planting across the natural slope of the land, rather than on the slope, which can accelerate erosion.
Though contouring is relatively affordable, it’s not suitable for every vineyard—and for established vineyards, it necessitates pulling out vines. But, especially when combined with other sustainable farming practices, it’s effective at protecting soil and encouraging biodiversity.
Also this week, Alex Russan examines the science behind thiols, the aroma compounds responsible for tropical and citrus notes in grapes like Sauvignon Blanc, Riesling, and beyond. Thiols are both diverse and complex, and viticulture, vinification, and even the presence of other compounds can impact their amount and perception.
